Recipe for Healthy Lentil Soup

Healthy Lentil Soup:

1/3 cup lentils (Urud, Toor, or Green Moong dahl)
2 and 1/2 cups water
1/2 an Onion
1/2 a large carrot or 4-6 baby carrots
1 small tomato or half a medium/ large tomato
1 tsp Cumin
1 tsp rosemary
1 tsp salt
1 tsp chilli powder
1 tsp any other herb you would like to taste :-P I added chia seeds one day!


Wash the lentils well (use the saucepan you will cook it in), rinse, and drain water 2-3 times. It is OK if a little extra water remains. Chop up the onions and tomatoes into small cubes. Cut the carrots lengthwise and small. Put the pot on stove, add the 2.5 cups of water and set to medium heat. Add everything - veggies all cut up, and all the spices,  into the saucepan the lentil is in. When is starts boiling lower it down and put the lid on, with a little room for the steam to escape. Boil it for 20-25 minutes checking on it and stirring it every 5-8 minutes. This is enough for one person/ one bowl.
